The Nosh is hosted by Rachel Belle, host of the James Beard-nominated podcast Your Last Meal and author of the new cookbook Open Sesame. A longtime Seattle journalist, Rachel sniffs out delicious food-and-drink-themed stories around the Pacific Northwest, with the intention of educating and entertaining. 

In this episode, Rachel is on a mission to prove to viewers that Seattle does in fact have excellent bagels. When she’s not listening to transplants complain about the state of the city’s bagels, she’s fielding questions about where to get the best ones.    

So we dive into the city’s growing bagel scene with bakers Roan Hartzog and Andrew Rubenstein. From hand-rolling, boiling and baking at Mt. Bagel to a pop-up adventure with Hey Bagel, Rachel uncovers the passion and dedication behind the craft, learning how local bagels have evolved to reflect the Pacific Northwest’s culture and agricultural bounty while still honoring their East Coast roots. Both bakers highlight the intersection of tradition, innovation and a vibrant entrepreneurial spirit that defines the region’s culinary scene.  

Through “Bagel Boom!,” Rachel Belle celebrates the revival of a beloved food, and her approachable storytelling educates and encourages viewers to take part in the ever-expanding food culture that exists right in their backyard. This episode underscores the mission of The Nosh to connect audiences to the deeper stories behind what’s on their plates; to create community through a universal love of eating and drinking; and to provide entertaining stories that spark conversation at their own dinner tables.
